Serrated Chaya, also known as Mexican Spinach Tree or Tree Spinach, is a nutrient-dense perennial leafy green native to Mexico and Central America. This variety features deeply lobed, serrated leaves that are not only ornamental but also highly edible once cooked—offering a rich, earthy flavor similar to spinach, but with far more protein, iron, calcium, and antioxidants.
Grown for centuries as a food and medicinal plant, Serrated Chaya thrives in hot, sunny climates, making it a go-to green for subtropical and tropical gardens. The plant can grow up to 6–10 feet tall, forming a lush, upright shrub that responds well to pruning and harvesting. The more you cut, the more it produces—making it one of the most productive perennial greens you can grow.
Unlike some Chaya types, this non-stinging variety is easy and safe to handle. Just remember: leaves must be cooked before eating to neutralize naturally occurring toxins—similar to how cassava is prepared. Once lightly boiled, Chaya becomes a tender, nutrient-packed supergreen you’ll want in soups, sautés, omelets, and broths year-round.
